In medium saucepan, boil giblets (including neck) in salted water until done, approximately 60 minutes or longer. Cut giblets and neck meat into small pieces. In a large heavy skillet, heat oil. Add onions and cook until golden. Stir in half the bread cubes. Add the rest of the ingredients. Turn into a deep bowl and mix well. Add enough hot water or chicken broth to moisten mixture.
